Apple Turnovers

Fall has definitely made it's way to my house! First the smell of pumpkin, now cinnamon apples...YUM! I have come to the conclusion that this is my favorite season with spring at a VERY close second!  I think I may burn my pumpkin spice candle year round. :)  When my family and I went to the apple orchards a week ago we had a lot of fun walking through the apple trees finding the perfect apples.  I knew I wanted to bake the apples into something delicious, I just didn't know what.  Last year I came across a recipe for apple turnovers, and they turned out so good, but I didn't save that recipe, shoot!  It really was very simple to make, but I still looked around the Internet to get a good idea for the basics.  I decided I am going to make these every fall because they are SO good and easy!
Apple Turnovers
 
So flaky, and sweet, MmmMmm!
Prep Time: 30 minutes
Cook Time: 25 minutes
Servings: 8(or more if you make them smaller)
Difficulty: Easy
Ingredients for Apple Turnover:
  • 4 medium size apples. I used Honey Crisp(peeled, cored, and sliced)
  • 1 (17.3 oz) pkg frozen puff pastry, thaw with instructions on package
  • 3 tbls butter
  • 1 cup brown sugar, lightly packed.  If you use apples that are more tart add a little more sugar.
  • 1 tsp ground cinnamon
  • 1 tbls cornstarch
  • 1 tbls water
  • 1 egg plus 1 tbls water for egg wash

Ingredients for Glaze:
  • 1 cup confectioners sugar
  • 1 tbls plus 1/2 tsp(if needed) milk
  • 1 tsp vanilla extract

Thaw out both sheets of puff pastry.
Peel, core, and slice up apples.  I had some extra cooked apples when I was done, but they will be yummy on toast or pancakes, so I'm not complaining!

Preheat oven to 350 degrees.  Melt butter in a large saucepan.
Add apples.  If you use a large saucepan you wont have the problem that I did below. :) I eventually switched to a bigger pan.  Cook for a few minutes on medium heat.

Add brown sugar. 
And cinnamon. Cook apples until soft. Mine took about 10 minutes all together.

Make sure you stir frequently to avoid burning the brown sugar sauce

Mix cornstarch and water together, and pour into apple mixture.  Stir, and sauce will thicken.  Turn off heat, and prepare pastry dough.  I cut one pastry sheet into four equal pieces, which will make 8 apple turnovers, but for my second sheet I cut each of the four sheets in half to make smaller rectangular shaped turnovers.  You can do whatever size or shape with these. :)

Lay each pastry sheet out on a baking sheet about an inch apart, and spoon a couple tablespoons of the apple mixture into the middle, at an angle from one corner to the opposite corner like this...

In the picture above grab the top left corner, and fold it to the bottom right corner, and press the edges to seal.  It should look like this bottom picture(but this was a different turnover then the one pictured above. oops!)  They really don't have to be pressed together to match up the sides perfectly because when they bake they puff up, and you can't tell they weren't made perfectly. :) That's how I like it!

Make egg wash in little bowl, using 1 egg, and 1 tbls water. 

Brush egg wash over the top of each pastry.  These are my little guys. :)

Bake in 350 degree oven for about 15 minutes, or until tops are brown and fluffy!

Let cool completely.  In meantime make glaze.  Mix confectioners sugar, milk and vanilla in a small bowl.  I added that extra 1/2 tsp of milk to mine because it wasn't as thin and I liked.  You be the judge of how thick you want yours. 

To make things simple I poured the glaze into a little Ziploc baggie, snipped the tiny tip off of one end, and piped the glaze onto the turnovers! Pretty!



These were amazing! My whole family loved them! Give them a try!
