Black Raspberry Oat Bars

So it seems I have recently fell in love with baking.  A good thing, and a bad thing.  The good part is all the delicious treats that can be made baking, and the bad thing is that a lot of those treats put a real hurting on the waist line.  Whew, it's a tough life, with a lot of tough choices. :)  I will continue to bake delicious treats though, no doubt about it, just may need to do more exercising to make up for it. :)  I definitely couldn't live without the yummy-not-so-good-for-you treats, so don't worry! I know I can make a more healthy version of some baked goods, but you know some recipes just shouldn't be messed with. I'm sure you know what I am talking about.  So relax, and enjoy these Black Raspberry Oat Bars with their one and a half sticks of butter in them. They are worth it, trust me. :)
Black Raspberry Oat Bars


Prep Time:  about 10 minutes
Bake Time:  20 minutes
Servings:  24 bars
Difficulty:  Super Easy(see a trend here yet:))

Black Raspberry Oat Bars
Ingredients:
  • 3/4 cup Butter, softened
  • 1 cup Light Brown Sugar, packed
  • 1 1/2 cups Old Fashioned Oats
  • 1 1/2 cups All-Purpose Flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking Powder
  • 1 (10oz) jar Black Raspberry Simply Fruit(I used Smuckers Simply Fruit Seedless Black Raspberry Spreadable Fruit)

Grease a 9"x13" baking pan.
In a large mixing bowl cream together the butter and brown sugar.  Set aside.




In another mixing bowl combine the oats, flour, salt, and baking powder.  Stir together.



Gradually add the oat mixture in with the creamed mixture.  It will end up crumbly when all combined.




Preheat oven to 400 degrees.
Press half of the mixture down into the bottom of your prepared pan


Spread the jar(10oz) of Black Raspberry Fruit Spread on the oats in the pan.



Crumble the remaining oat mixture on top of the fruit spread.



Bake at 400 degrees for 20 minutes, or until the top is lightly golden.
Cool completely before cutting into squares.  Enjoy this simple recipe!  These can be enjoyed for breakfasts, snacks, or dessert! YUM!

My Mom had this recipe tucked away in one of her cookbooks.  It is from Allrecipes.com but I cannot find the original recipe on there.  I think it is an older recipe.

Another odd question for today...Is it just me, or are there any others out there that stop the microwave right before it beeps?? :)
