Pina Colada Yogurt Parfait

I seriously think I just found my new favorite breakfast.  This Pina Colada Yogurt Parfait is so good and would be perfect for breakfast, right?  Yogurt...(duh!)  Or of course it would be a perfect healthy dessert.  Anyway you look at it, it would be awesome, morning, noon, or night.  I'll take the "dessert" for breakfast. :)  My two favorite flavors/food of ALL TIME(no joke) are pineapple and coconut.  Oh geez, they make my mouth water.  If I have a choice between different flavors, and both of those flavors were choices, I would probably end up eating one of each, for sure, no doubt!  I LOVE them this----------------------------------------------------------------------------------------much!  I'll quit talking about my obsession of pineapple and coconut, and show you how to make this yummy parfait.  ;)

Black Raspberry Oat Bars

So it seems I have recently fell in love with baking.  A good thing, and a bad thing.  The good part is all the delicious treats that can be made baking, and the bad thing is that a lot of those treats put a real hurting on the waist line.  Whew, it's a tough life, with a lot of tough choices. :)  I will continue to bake delicious treats though, no doubt about it, just may need to do more exercising to make up for it. :)  I definitely couldn't live without the yummy-not-so-good-for-you treats, so don't worry! I know I can make a more healthy version of some baked goods, but you know some recipes just shouldn't be messed with. I'm sure you know what I am talking about.  So relax, and enjoy these Black Raspberry Oat Bars with their one and a half sticks of butter in them. They are worth it, trust me. :)

Individual Apple Crisps with Brown Sugar Glaze

After I made the Apple Turnovers I was left with three apples.  I need to use them up pretty quick since I have had them in the fridge for a few weeks now.  Last night I was craving some dessert, and I remembered I had those apples, but wanted to make something semi quick, and a small serving, so I came up with Individual Apple Crisps!  This ended up being the perfect size dessert, and it was SO yummy!  This would be a great dessert if you have about half an hour or so before the real sweetness needing stomach kicks in!  It is fun to prepare, and eat.  Mind you that it does get a little messy on your plate, but what good dessert doesn't?!  If you have an extra apple in the fridge give this a go!

Apple Turnovers

Fall has definitely made it's way to my house! First the smell of pumpkin, now cinnamon apples...YUM! I have come to the conclusion that this is my favorite season with spring at a VERY close second!  I think I may burn my pumpkin spice candle year round. :)  When my family and I went to the apple orchards a week ago we had a lot of fun walking through the apple trees finding the perfect apples.  I knew I wanted to bake the apples into something delicious, I just didn't know what.  Last year I came across a recipe for apple turnovers, and they turned out so good, but I didn't save that recipe, shoot!  It really was very simple to make, but I still looked around the Internet to get a good idea for the basics.  I decided I am going to make these every fall because they are SO good and easy!

Cranberry Pumpkin Muffins

I enjoyed another baking day at my friend Melissa's home again.  She made the Healthier Monkey Muffins yesterday, that I made from my very first blog post!  She didn't have whole wheat flour though so she used all, all-purpose.  They turned out awesome, and her and her kids loved them! I was a little jealous that I didn't make any muffins to bring home while I was over there.  SO...her and I planned another baking day yesterday, just so I could make some muffins!
I am totally in Fall mode now, and when I think of Fall, I think of PUMPKIN!  I love everything about pumpkin.  It is SO good, and is healthy for you.  I will have many more recipes with pumpkin this Fall.  I haven't tried any savory recipes with it yet, but I plan on it, so we will see what my tummy can't live without. :)  Too bad pumpkin isn't on sale yet in the stores, because I will be clearing the shelves, the grocery stores will love me. :)  I looked all over the Internet last night, and decided on Cranberry Pumpkin Muffins, and the recipe I found here, on Tasty Kitchen. Check that link for the original version. Of course I can't follow a recipe to the tee, so I healthified it, and changed it up a bit.  These muffins are so good, I seriously could not eat just ONE.  Melissa, her two kids, and my husband and I all loved them.  I'm glad I have leftovers! :)

Peach Cobbler

Hello again!  Thanks for continuing to read my blog.  I really am loving this, and enjoying the comments a lot.  I told you all I made peach cobbler, remember?! How could you forget. :)  I found this recipe online on http://www.myrecipes.com/, you can find the recipe here.  It turned out quite yummy, but there are a couple changes I would do.  It was considered an easy cobbler recipe, and it really was.  Peaches are in season, well actually towards the end of the season I think.  I went to Safeway(which I really don't like all that much) because it was close, and grabbed five peaches, and it was less than 2 dollars! I thought that was pretty darn good, but I didn't shop around so I'm not sure if .99cents a pound is the going rate for them or not right now.  I was happy with it though.  Sorry to say my husband and I didn't cut into the cobbler until later at night, so I didn't get too many good pictures.  I'll share with you what I have.
