Cinnamon Sugar Pull Apart Bread

Is there anyone else out there that likes putting cinnamon and sugar on toast?  I love it!  I forget about it most of the time, but once I remember, it usually is a staple in my house for a good week or so.  It's such a good dessert, that is quick and easy, and requires very little that most people always have on hand.  Yum!  Cinnamon is also good for you, so that is a plus!  I have had my eye on this Cinnamon and Sugar Pull Apart Bread for many moons now, and I finally got around to making it, and HOLY MOLY, it could quite possibly be the best thing on earth!  I instantly fell in love with it!  It's so much fun to make, and seriously just looking at it makes me happy.  It's so pleasing to the eye, and undeniably pleasing to the stomach.  I shared some with my Mom, and she texted me later, and said "Yum! To heck with dinner!" :)  Dessert before dinner is how my Mom rolls, and if I had that in front of me too, I wouldn't pass it up.  This is definitely a keeper in my book!  I already can't wait to make it again!! Seriously...go try this! :)
Cinnamon Sugar Pull Apart Bread

Prep Time: Total 30-45 minutes
Rise Time: 1 hr 35-45 minutes
Bake Time:  30-35 minutes
Servings: 1-9"x5" loaf
Difficulty: Easy/Medium




Cinnamon Sugar Pull Apart Bread
Ingredients:
  • 2 3/4 cups plus 2 tablespoons All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 2 1/4 tsp Active Dry Yeast(equals 1 packet)
  • 1/2 tsp Salt
  • 1/2 stick of Unsalted Butter(or 2 ounces)
  • 1/3 cup Whole Milk
  • 1/4 cup Water
  • 2 Large Eggs, at room temperature
  • 1 tsp Vanilla Extract
For the Filling:
  • 1 cup Granulated Sugar
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/2 stick of Unsalted Butter(2 ounces), melted

In a large mixing bowl, add 2 cups of flour, sugar, yeast, and salt.  Mix together, and set aside.


Whisk together eggs, and set aside.


In a small sauce pan add the butter, and milk.  Heat on low until the butter has melted.  Take the pan of the heat and add in the water, and vanilla.  Mix together, and let sit for a couple minutes.




Pour the milk mixture into the flour mixture.  Stir together. 
  

Add the eggs, and stir together as much as you can.  The batter will seem like it wont come together all the way that is alright.


 Add the remaining 3/4 cup of flour, and stir until incorporated.  The batter will be sticky.



Place dough in a large greased bowl.  Cover with clean kitchen towel, and let rise in a warm place for about an hour, until doubled in size.  In the meantime prepare the filling.
In a small mixing bowl combine the sugar, cinnamon, and nutmeg.  Mix together.



Melt butter, and set aside.  Grease and flour a 9x5 inch loaf pan.


Punch down the dough to deflate.  Knead in about 2 tablespoons of flour, cover with the kitchen towel and let rest 5 minutes.
After the 5 minutes, lightly flour a flat work surface, and use a rolling pin to roll out dough.  It should measure about 12 inches by 20 inches.


Spread the melted butter all over the dough, then sprinkle with the sugar cinnamon.  It seems like a lot, but seriously, do it. :)


Slice the dough vertically into 6 equal size strips.  I used a pizza cutter, it worked the best.  Lay the slices on top of each other.


Then slice the stack into 6 equal size stacks.  So you will have 6 stacks of 6 slices.


Layer each stack into the prepared loaf pan, making sure you keep them tight together.  Lay the kitchen towel over the dough in the loaf pan and let rise for 30-45 minutes.  Preheat oven to


After the dough has risen, place in the preheated oven, and bake for 30-35 minutes, or until the top is a dark golden brown.  You want the dough in the center to be cooked, so it's alright if the top is dark brown.



Take bread out of oven and let rest for 20 minutes.  Take a butter knife and run it along the edges to loosen.  Place a plate on top of the dough and turn it upside down, and then turn it right side up onto a clean surface.  There you have it! It's done and ready to be devoured!  It is best served warm!
