Cilantro Lime Rice
- 4 cups Water
- 2 Tbls Butter(you can omit this if you would like)
- 2 cups Long Grain White Rice
- 1-2 tsp Lime Zest
- 2 Tbls Fresh Lime Juice(or less-this ends up being quite limey :))
- ¾-1 cup Chopped Cilantro
- 1 tsp Salt(to taste)
Bring the water to a boil in a large pot, add butter and rice. Cover and reduce heat to low. Cook for 20 minutes, until rice is done.
Meanwhile chop the Cilantro, grate the lime zest, and squeeze the lime.
Add the lime zest, lime juice and salt to the rice. Stir together and serve! Perfect refreshing side dish!
