Spinach and Mushroom Stuffed Chicken

Good afternoon all my lovely blog readers! I hope you all are having a wonderful Tuesday!  I have been busy today, trying to figure out a dessert to make for our sweet tooth after dinner tonight.  I finally figured it out, and it is in the oven as we speak...drum roll please.......Peach Cobbler! Yum! I can't wait to try it, and share the recipe with you...soon! As for the recipe I will share with you today, it was dinner last night, and it was delicious! Ready, set, go!
Spinach and Mushroom Stuffed Chicken

I had to take the above photo right after I pulled it out of the oven.  We couldn't wait to eat it.  I have made this a few times before, and we love it every time.  I think I always use different seasonings too, I just throw in whatever sounds good at the moment.
Ingredients:(serves 4)
  • 4 chicken breasts
  • 2 eggs
  • 1 cup Panko bread crumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz mushrooms, diced into chunks
  • 1 big handful of fresh baby spinach
  • 1/4 cup onion, diced
  • 1/2 cup Pepper Jack cheese, grated

First you make a slit down each chicken breast, to create a pocket.  Be careful when doing this to not go through the other side, or the bottom.  Sadly, I did it on two out of the four I made last night.  I was in too much of a hurry, and more worried about taking pictures.  Guess that is what I get for being a new food blogger. :) 
Then in a shallow dish, or plate, spread out the Panko bread crumbs.  I use these because they tend to leave a crispier crust, and we love that.  Add the seasonings, and mix together.

Dice up your onion.  Saute the onions in a pan drizzled with a little olive oil for a few minutes.  Then add in the mushrooms.


When mushrooms are cooked, add in the spinach.  Stir together.  The spinach will immediately start wilting, and it wont take long until it has all wilted. Turn off stove and let sit until ready to fill chicken breasts.


Whisk eggs in a little dish.  Dip chicken into eggs, then into Panko crumb mixture.
Coat the chicken really well in the Panko crumbs. Cover a baking sheet with tin foil, and spray with cooking spray.  Lay the breaded chicken onto baking sheet. Continue with all chicken breasts.

Grate your cheese

Scoop up some mushroom,spinach mix, and stuff it into the chicken, as much as you can get in there.  Then take a little cheese and do the same.

Bake at 350 degrees, until chicken is done.  Mine took about 30 minutes or so, but it totally depends on how thick your chicken is.

Yum, eat up, and enjoy! We love this dish!

My favorite meat, is definitely chicken.  You can prepare it so many different ways, and it is healthy!

  2. I have not had stuffed chicken in a long time. I am going to have to try this one. chicken is a staple in my house ( well when Matt is out of town)
