Turkey and Mushroom Stroganoff

Hello readers! I hope you all are having an awesome day! This recipe I'm posting today is a favorite of my husband and mine. I have been making it for some years now. There are so many ways to make stroganoff and truthfully I have never tried it any other way. I came up with this healthier version, and we love it, I hope you will too. You can make it with other meat too like ground beef, or slices of whatever beef you prefer. I know there are others who don't like mushrooms like we do, it's a shame:) Mushrooms are very good for you too! So for those of you who think they taste like dirt, ;) you can omit them from this recipe also. You will just have to cut back on the flour/corn starch, water and sour cream. Or you can try them, they are SO good! I don't have kids to cook for yet, but I think you could cut the mushrooms into small pieces and they would love it.(I hope) This recipe is SO simple, and is good for a meal that you don't want to spend all night slaving away in the kitchen over.


Ingredients:
  • 12oz Pasta(I totally just dump some in and estimate how many noodles I want) I used Hodson Mill Whole Wheat Spirals because that is what I had on hand. I'm all about using up items in the pantry before buying more. You could use the standard egg noodles, or whatever strikes your fancy ;)
  • 1LB Turkey burger
  • 1LB Mushrooms, Sliced
  • 3TBLS Water
  • 1 Beef Bouillon Cube
  • 1TBLS Onion Powder
  • 3/4 cup Sour Cream
  • 1TBLS Flour or Cornstarch
  • Salt and Pepper to taste
That's it! Very minimal ingredients.
Here they are! I know, I cut corners by buying already sliced mushrooms. They were cheaper this way, only about .07 cents, but STILL!

First bring a pot of water to a boil, and throw in the pasta. I also add in a little salt to season the pasta(learned that from Rachael Ray:)) Follow cooking instructions on package.

Meanwhile pasta is cooking, throw your sliced mushrooms in a sauce pan, and add the water.  I add water instead of butter or oil.  The mushrooms will soak up the water and they will seem dry in the sauce pan, but will eventually cook down and juices will come out.

When pasta is done, drain.  I don't rinse my pasta, but that is totally your call.
After mushrooms start cooking down a little add the beef bouillon cube, and break it into little pieces.  Stir to combine.The beef bouillon adds amazing flavor to these mushrooms.  Go ahead pick one or two, maybe even THREE out to try for yourself.  Be sure to leave enough for the dish! They really are THAT good!  My mushrooms are about done here, I like a little life left in them. :) Oh my goodness this picture makes my mouth water! Yummo!
Transfer mushrooms to a plate, or bowl, and add turkey burger to the sauce pan.  After the turkey has started to brown add the onion powder.  I know that seems like A LOT, but it totally helps with the "stroganoff" flavor!
Fully cook meat.
Add mushrooms to the turkey. Stir to combine.  There should be plenty of juice at this point.  This is where you add in a TBLS of flour.  I usually just make a area in the sauce pan where I push the meat and mushrooms to the other side, so I have room to whisk in the flour. It will thicken, and look like the juice is about gone, which is good.

Add in the sour cream. Stir to combine.  Cook for about a minute on low heat at this point.

Viola! It's done!  Actually mine looks a tad runnier then it should.  I was trying to figure out how much flour to add.  A little thicker than this is perfect! Mix the meat and mushroom mixture together, and you are done! Taste test, and see if you would like some salt and pepper. 
Now this part is crucial, dump the whole sauce pan on your plate, because you WILL want that much! Alright maybe not, just go back for seconds or thirds ;) I really do TRY to watch my portions though, but it is mighty hard to do with this dish :)

  1. Hmm... one of my go to recipes is my pork chops in mushroom/wine sauce that I am making tonight! So you will probably see it on my blog soon. I don't usually measure the ingredients, I just wing it, but I'm going to try to measure it so I can post the recipe :)
