Pina Colada Yogurt Parfait

I seriously think I just found my new favorite breakfast.  This Pina Colada Yogurt Parfait is so good and would be perfect for breakfast, right?  Yogurt...(duh!)  Or of course it would be a perfect healthy dessert.  Anyway you look at it, it would be awesome, morning, noon, or night.  I'll take the "dessert" for breakfast. :)  My two favorite flavors/food of ALL TIME(no joke) are pineapple and coconut.  Oh geez, they make my mouth water.  If I have a choice between different flavors, and both of those flavors were choices, I would probably end up eating one of each, for sure, no doubt!  I LOVE them this----------------------------------------------------------------------------------------much!  I'll quit talking about my obsession of pineapple and coconut, and show you how to make this yummy parfait.  ;)

Pina Colada Yogurt Parfait

Prep Time:  about 10 minutes
Cook Time:  3-5 minutes
Servings:  1-2(depending on if you want to share:))
Difficulty:  Can it get any easier?? Just don't forget to keep a close eye on the coconut while it's toasting.  It can burn quick.  I may or may not have burnt mine, and thrown the first batch in the trash.  We will keep that a secret.

Pina Colada Yogurt Parfait
Ingredients:
  • 2 Tbsp(heaping if you're like me) Sweetened Flaked Coconut
  • 1 single serving Greek Vanilla Yogurt  (I used Oikos)
  • 1/2 cup Crushed Pineapple

Toast the coconut in a small pan, over low-medium.  Carefully watch, and stir frequently.  Shouldn't take more than 5 minutes at the most. 



Add the vanilla yogurt to a small serving dish.


Top with crushed pineapple.



Top with toasted coconut.  Grab a spoon and dig in.  I can't believe I shared this with my Husband.  I sure am nice. ;)

I am totally in love with food, so pineapple and coconut are just the beginning.  I'll spare you the long list. :)
