Servings: original recipes says 5 dozen. Mine made 46 cookies. Depends on the size of ball you make.

Caramel Filled Chocolate Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup plus 1 tablespoon sugar, divided
- 1 cup packed brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 2½ cups all-purpose flour
- ¾ cup baking cocoa
- 1 teaspoon baking soda
- 1 package (13 ounces) Rolo candies
- 4 ounces white baking chocolate, chopped
Preparation:
In a large bowl, cream butter, 1 cup sugar and brown sugar. Add the eggs, and vanilla.
Combine the flour, cocoa and baking soda. Slowly add to the wet mixture, beating just until combined.
Form a ball of dough around each candy, about a tablespoon of dough. Make sure none of the candy is showing otherwise it will melt out of your cookie, and you will have a mess. This would be the most important part, and I didn't take pictures, BOO! I had my hands in the semi sticky dough-what was I supposed to do? :) Place balls on a greased baking sheet about 2-inches apart, as they will spread. Bake at 375° for 7-10 minutes or until tops are slightly cracked. Cool for 3 minutes before removing to wire racks to cool completely.
In a microwave, melt white chocolate at 50% power for 1 minute-stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Drizzle over cookies.
